The top Indian-born Chef Atul Kochhar serves hot chips with his fine Indian Cuisine onboard ‘Azura’ Atul will be on board Azura July 23rd, August 8th and 21st September this year.
Atul is said to be very excited about the opening of Sindhu on Azura, he has never done anything like it before, but is looking forward to the prospect of sailing somewhere and cooking at the same time. Serving beef and pork for the first time (Indian restaurants rarely serve beef and pork for cultural reasons) he will be focusing quite heavily on it, for example, a Goan inspired dish, fillet of beef, marinated in piri-piri spices and grilled to perfection, served with piri-piri sauce and to keep the British twist he is so famous for – he will be serving it with chips and a spicy coriander sauce.
Working in a Galley is very different to his London kitchens, although there is the same work ethos, the same discipline and when you’re working with similar food, there are the same familiar smells. Although the tandoor onboard is a little different as they have a electric one rather than the open flamed Tandoor he is used to at home, he will smoke the meat in a smoke chamber to give it all the same full flavours we expect. There will be a cross over from Benares and his other restaurants, there will be his signature style Indian Food with that British twist. He has split the restaurant in two. The NASTA area where you can sample Indian street food in a traditional way with live demonstrations and then there is the main dining area where dinner will be served (only open for evening dining)
Atul has previously cruised to Norway with his wife and felt that was amazing, he is loving cruising as a great way to see the Fjords with plenty to do onboard.
